Chicken paprikash

Ingredients

  • Chicken breasts/thighs/drumsticks (cut into chunks) - 1 kg
  • Onions (diced/sliced) - 2
  • Bell pepper (sliced) - 2
  • Juice of a lemon
  • Diced/crushed tomatoes - 400 g
  • Single/double cream - 300 ml
  • Paprika - 3 tbsp
  • Ghee/butter and olive oil mixture (1:1 ratio) - 2 tbsp
  • Olive oil
  • Chicken stock cube - 2
  • Cooked rice
  • Chilli oil - to taste (optional)

Steps

  1. Fry the chicken in a large frying pan using the ghee until lightly browned. While cooking the chicken, fry the onions and bell peppers in another large frying pan using olive oil until the onions are lightly browned.
  2. Mix the stock cubes with 200 ml of boiling water and add this mixture, along with the tin of tomatoes, paprika, and chilli oil, to a large pot or frying pan with the chicken, onions, and bell peppers. Simmer for 8 minutes while stirring.
  3. Add the cream and lemon juice. Cook for a few minutes and season to taste.
  4. Serve with rice.
