Mackerel Patties

Ingredients
- Tinned boneless mackerel in brine - 500 g
- Eggs - 2
- Parmesan cheese (grated) - 0.25 cups
- Breadcrumbs - 0.5 cups
- Chopped chives or scallion - 2 tbsp
- Mayonnaise - 2 tbsp
- Vegetable oil (or another flavourless oil)
- Rice/chips/burger buns/your choice of carbohydrates (optional)
- Mayonnaise/ketchup/your choice of condiments (optional)
Steps
- Drain the mackerel and break it into small pieces in a bowl using a fork.
- Add the eggs, parmesan cheese, breadcrumbs, chives/scallion, and mayonnaise to the bowl. Mix and shape into patties.
- Fry the patties in oil.
- Serve with your choice of carbohydrates and condiments.
