Mackerel Patties

Mackerel Patties

Ingredients

  • Tinned boneless mackerel in brine - 500 g
  • Eggs - 2
  • Parmesan cheese (grated) - 0.25 cups
  • Breadcrumbs - 0.5 cups
  • Chopped chives or scallion - 2 tbsp
  • Mayonnaise - 2 tbsp
  • Vegetable oil (or another flavourless oil)
  • Rice/chips/burger buns/your choice of carbohydrates (optional)
  • Mayonnaise/ketchup/your choice of condiments (optional)

Steps

  1. Drain the mackerel and break it into small pieces in a bowl using a fork.
  2. Add the eggs, parmesan cheese, breadcrumbs, chives/scallion, and mayonnaise to the bowl. Mix and shape into patties.
  3. Fry the patties in oil.
  4. Serve with your choice of carbohydrates and condiments.
